When I heard that Melody at Kids, Cakes, Dishes, and Laundry...in that order was hosting a Bloggy Cookie Exchange, I just had to participate!Grab an ice cold glass of milk and sample a few of my cookies that have the texture of a brownie but are in the form of a cookie.
SOFT AND CHEWY CHOCOLATE BITES
4 squares of unsweetened baking chocolate
3/4 cup butter
2 cups sugar
3 eggs
1 tsp. vanilla
2 cups flour
Preheat oven to 350 degrees. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted. Stir in sugar. Blend in eggs and vanilla. Add flour; mix well. Refrigerate 20 minutes or until dough is easy to handle.
Shape dough into 1-inch balls; place 2 inches apart on greased baking sheets.
Bake 9 minutes or just until set (do not overbake). Let stand on baking sheet 1 minute; transfer to wire racks and cool completely.
Makes about 5 dozen.
(Yummy option: Right after they come out of the oven, press one of the following onto each cookie~ a walnut half; a marshmallow half; coarsely chopped candy canes; a drizzle of melted semi-sweet baking chocolate.)

Oh my word! I am SO not supposed to eat chocolate, but these look so good I may just have to make them for the family and then sneak a taste! And adding peppermint candies??? YUM!! Chocolate and mint are my favorites!!

These sound and look delicious. I bet they would taste good with an peanut butter frosting. Yummy!
